Breakfast: 2 farm fresh scrambled eggs with parsley & chives from my little herb garden. I know a non exciting yet tasty start to the local challenge and my day, things will get more exciting!
Lunch: A mixed lettuce salad and squash soup. A huge thank you to my boss Chris for giving me the soup, Yum!
Dinner: Medallian beef burgers with cheese (Bongards) wrapped in lettuce with Fresh broccoli & cauliflower and last year’s sweet corn.
My family also had the opportunity to go and visit the Community Supported Agriculture (CSA) that we joined, DEW Drop Gardens, in rural Hector, MN. It was cool to see a plot of land that had tiny seedlings starting to appear and think that in just a few weeks this garden will be capable to feeding 16-20 families!
